Ingredients

  • 6 cups tortilla chips

  • 1 1/2 cups shredded Mexican blend cheese (or your favorite cheese)

  • 1 cup diced tomatoes

  • 1/2 cup diced red bell pepper

  • 1/2 cup sliced jalapeños (optional)

  • 1/2 cup sliced black olives

  • 1/2 cup chopped cilantro

  • 1/2 cup sour cream or Greek yogurt (for topping)

  • 1 lime, cut into wedges

Directions

  • Spread the tortilla chips evenly on a baking sheet or pan that fits into your toaster oven.

  • Sprinkle the shredded cheese over the chips, making sure to cover them evenly.

  • Top with diced tomatoes, red bell pepper, jalapeños, and black olives.

  • Place in the toaster oven and set to broil at 400°F. Cook for 5-7 minutes, or until the cheese is fully melted and bubbly.

  • Remove from the toaster oven and sprinkle with fresh cilantro.

  • Serve immediately with sour cream or Greek yogurt on the side and lime wedges for squeezing over the nachos.
