Air Fryer Toaster Oven
Ingredients
6 cups tortilla chips
1 1/2 cups shredded Mexican blend cheese (or your favorite cheese)
1 cup diced tomatoes
1/2 cup diced red bell pepper
1/2 cup sliced jalapeños (optional)
1/2 cup sliced black olives
1/2 cup chopped cilantro
1/2 cup sour cream or Greek yogurt (for topping)
1 lime, cut into wedges
Directions
Spread the tortilla chips evenly on a baking sheet or pan that fits into your toaster oven.
Sprinkle the shredded cheese over the chips, making sure to cover them evenly.
Top with diced tomatoes, red bell pepper, jalapeños, and black olives.
Place in the toaster oven and set to broil at 400°F. Cook for 5-7 minutes, or until the cheese is fully melted and bubbly.
Remove from the toaster oven and sprinkle with fresh cilantro.
Serve immediately with sour cream or Greek yogurt on the side and lime wedges for squeezing over the nachos.
Tips:
Add variety with toppings like corn, black beans, or avocado slices.
For extra spice, drizzle with hot sauce or sprinkle with crushed red pepper flakes.
To make it a meal, add plant-based protein like seasoned tofu or tempeh.
