Slow Cooker Cheesy Scrambled Eggs with Spinach

Ingredients

  • 4 large eggs

  • ¼ cup whole milk

  • ½ cup shredded mozzarella cheese (or cheese blend)

  • ½ cup fresh spinach leaves, roughly chopped

  • ⅛ teaspoon garlic powder

  • Salt and freshly ground black pepper, to taste

  • Nonstick cooking spray or ½ tablespoon butter

Directions

  • Prep Your Cooker Lightly grease the insert of your bella 2QT Slow Cooker with nonstick spray or butter.

  • Whisk the Eggs In a bowl, whisk together eggs, milk, garlic powder, salt, and pepper until well combined.

  • Add Spinach and Cheese Stir in the chopped spinach and ¼ cup of the shredded cheese. Reserve the remaining cheese for later.

  • Slow Cook It Pour the egg mixture into the slow cooker. Cover and cook on LOW for 1 to 1.5 hours, stirring every 30 minutes to form soft, fluffy curds.

  • Cheese Finish Once the eggs are mostly set, sprinkle the remaining cheese on top. Cover and let melt for 5 minutes.

  • Serve and Enjoy Stir gently, season to taste, and serve warm with toast, avocado, or your favorite breakfast side.
