Slow Cooker Set
Ingredients
For One Serving (2qt bella Slow Cooker):
½ cup mixed beans (canned, drained, and rinsed)
1 cup vegetable broth
¼ cup diced tomatoes (canned or fresh)
¼ cup chopped carrots
¼ cup chopped celery
1 small garlic clove, minced
¼ teaspoon smoked paprika
¼ teaspoon cumin
¼ teaspoon dried oregano
Salt & black pepper, to taste
1 teaspoon olive oil
Fresh parsley for garnish (optional)
For Larger Batch (6qt bella Slow Cooker - 4-6 Servings):
2 cups mixed beans (canned or dried & soaked overnight)
4 cups vegetable broth
1 cup diced tomatoes
1 cup chopped carrots
1 cup chopped celery
2 garlic cloves, minced
1 teaspoon smoked paprika
1 teaspoon cumin
1 teaspoon dried oregano
Salt & black pepper, to taste
1 tablespoon olive oil
Fresh parsley for garnish (optional)
Directions
Prepare the Ingredients
If using dried beans, soak them overnight and drain before adding to the slow cooker.
If using canned beans, drain and rinse them well.
Load the Slow Cooker
Add the beans, broth, tomatoes, carrots, celery, garlic, and spices to the slow cooker.
Drizzle with olive oil and stir to combine.
Set and Forget
For small slow cooker (single serving): Cook on low for 4-5 hours or high for 2-3 hours.
For large slow cooker (4-6 servings): Cook on low for 6-8 hours or high for 3-4 hours.
Serve & Enjoy
Ladle the hot bean soup into a bowl and garnish with fresh parsley.
Enjoy as is, or pair with crusty bread for a heartier meal!
