Slow Cooker Bean Soup

Ingredients

For One Serving (2qt bella Slow Cooker):

  • ½ cup mixed beans (canned, drained, and rinsed)

  • 1 cup vegetable broth

  • ¼ cup diced tomatoes (canned or fresh)

  • ¼ cup chopped carrots

  • ¼ cup chopped celery

  • 1 small garlic clove, minced

  • ¼ teaspoon smoked paprika

  • ¼ teaspoon cumin

  • ¼ teaspoon dried oregano

  • Salt & black pepper, to taste

  • 1 teaspoon olive oil

  • Fresh parsley for garnish (optional)

For Larger Batch (6qt bella Slow Cooker - 4-6 Servings):

  • 2 cups mixed beans (canned or dried & soaked overnight)

  • 4 cups vegetable broth

  • 1 cup diced tomatoes

  • 1 cup chopped carrots

  • 1 cup chopped celery

  • 2 garlic cloves, minced

  • 1 teaspoon smoked paprika

  • 1 teaspoon cumin

  • 1 teaspoon dried oregano

  • Salt & black pepper, to taste

  • 1 tablespoon olive oil

  • Fresh parsley for garnish (optional)

Directions

  1. Prepare the Ingredients

    • If using dried beans, soak them overnight and drain before adding to the slow cooker.

    • If using canned beans, drain and rinse them well.

  2. Load the Slow Cooker

    • Add the beans, broth, tomatoes, carrots, celery, garlic, and spices to the slow cooker.

    • Drizzle with olive oil and stir to combine.

  3. Set and Forget

    • For small slow cooker (single serving): Cook on low for 4-5 hours or high for 2-3 hours.

    • For large slow cooker (4-6 servings): Cook on low for 6-8 hours or high for 3-4 hours.

  4. Serve & Enjoy

    • Ladle the hot bean soup into a bowl and garnish with fresh parsley.

    • Enjoy as is, or pair with crusty bread for a heartier meal!
