Creamy Lemon Asparagus Chicken

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 2 tablespoons olive oil

  • 2 tablespoons unsalted butter

  • 3 garlic cloves, minced

  • 1 cup chicken broth

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • Juice of 1 lemon

  • 1 lemon, thinly sliced

  • 1 bunch asparagus, trimmed and cut into 2-inch pieces

  • 1 teaspoon Italian seasoning

  • 2 tablespoons chopped fresh parsley

Directions

  • Preheat the bella Make & Take Electric Skillet to medium-high heat. Pat the chicken breasts dry and season both sides with salt, pepper, and garlic powder.

  • Add olive oil and butter to the skillet. Once hot, place the chicken breasts in the skillet and sear for 4–5 minutes per side until golden brown. Remove the chicken and set aside.

  • Reduce the heat to medium. Add minced garlic and sauté for 30 seconds until fragrant.

  • Pour in the chicken broth and use a wooden spoon to scrape up any flavorful browned bits from the bottom of the skillet.

  • Stir in the heavy cream, Parmesan cheese, lemon juice, and Italian seasoning. Let the sauce simmer for 2–3 minutes until slightly thickened.

  • Add the asparagus and lemon slices to the skillet. Return the chicken breasts to the sauce, nestling them between the vegetables.

  • Cover and cook for 10–12 minutes, or until the chicken reaches an internal temperature of 165°F and the asparagus is tender.

  • Garnish with fresh parsley before serving. Spoon the creamy lemon sauce over the chicken and vegetables for the perfect finishing touch.
