Ingredients

For the Filling:

  • 2 cups fresh or frozen blueberries

  • 1/4 cup granulated sugar

  • 1 tablespoon cornstarch

  • 1 teaspoon lemon juice

  • 1/2 teaspoon vanilla extract

For the Topping:

  • 1/2 cup all-purpose flour

  • 1/4 cup granulated sugar

  • 1/4 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, melted

  • 2 tablespoons milk

Directions

  • Preheat the toaster oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet that fits inside the toaster oven.

  • In a mixing bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until the blueberries are evenly coated. Pour the mixture into the prepared baking dish.

  • In another bowl, whisk together flour, sugar, baking powder, and salt. Add the melted butter and milk, stirring until a soft dough forms.

  • Drop spoonfuls of the topping over the blueberry mixture, spreading gently to cover most of the fruit (it’s okay if some filling peeks through).

  • Place the baking dish in the toaster oven and bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.

  • Allow the cobbler to cool for 5 minutes before serving.

  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Tips:

  • Swap blueberries for other fruits like peaches, blackberries, or a mix for variety.

  • For extra flavor, sprinkle cinnamon or nutmeg into the topping.

  • To avoid spills, place the baking dish on a baking sheet or toaster oven tray.
