Air Fryer Toaster Oven
Ingredients
For the Filling:
2 cups fresh or frozen blueberries
1/4 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon lemon juice
1/2 teaspoon vanilla extract
For the Topping:
1/2 cup all-purpose flour
1/4 cup granulated sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, melted
2 tablespoons milk
Directions
Preheat the toaster oven to 375°F (190°C). Lightly grease a small baking dish or oven-safe skillet that fits inside the toaster oven.
In a mixing bowl, combine blueberries, sugar, cornstarch, lemon juice, and vanilla extract. Stir until the blueberries are evenly coated. Pour the mixture into the prepared baking dish.
In another bowl, whisk together flour, sugar, baking powder, and salt. Add the melted butter and milk, stirring until a soft dough forms.
Drop spoonfuls of the topping over the blueberry mixture, spreading gently to cover most of the fruit (it’s okay if some filling peeks through).
Place the baking dish in the toaster oven and bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
Allow the cobbler to cool for 5 minutes before serving.
Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
Tips:
Swap blueberries for other fruits like peaches, blackberries, or a mix for variety.
For extra flavor, sprinkle cinnamon or nutmeg into the topping.
To avoid spills, place the baking dish on a baking sheet or toaster oven tray.
