Roasted Rainbow Carrots with Feta and Thyme

Ingredients

  • 1 lb rainbow carrots, peeled and trimmed

  • 1 tbsp olive oil

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp garlic powder

  • 1 tbsp fresh thyme leaves (plus more for garnish)

  • 1/4 cup crumbled feta cheese

Directions

  • Season the carrots: Toss the carrots in a bowl with olive oil, salt, pepper, garlic powder, and thyme until well coated.

  • Air fry: Place the carrots in the bella 4qt Slim Air Fryer basket in a single layer. Set to 380°F and cook for 15 minutes, shaking the basket halfway through. Carrots should be lightly caramelized and fork-tender.

  • Finish and serve: Transfer to a serving plate. Sprinkle with crumbled feta and a few extra thyme leaves before serving.
