Pumpkin Spice Pancakes with Maple and Pepitas

Ingredients

  • 1 cup all-purpose flour

  • 2 tablespoons brown sugar

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon pumpkin pie spice

  • 1/4 teaspoon salt

  • 3/4 cup buttermilk

  • 1/4 cup pumpkin purée

  • 1 large egg

  • 1 tablespoon melted butter (plus more for the griddle)

  • Maple syrup, for serving

  • Pepitas (pumpkin seeds), for topping

  • Star anise (optional, for garnish)

Directions

  • Make the batter: In a medium bowl, whisk together flour, brown sugar, baking powder, baking soda, pumpkin pie spice, and salt. In a separate bowl, whisk together buttermilk, pumpkin purée, egg, and melted butter. Combine wet and dry ingredients and stir until just mixed.

  • Preheat the griddle: Heat your bella 12” x 22” XL Griddle with Warming Tray to medium. Lightly butter the surface.

  • Cook the pancakes: Scoop 1/4 cup of batter per pancake onto the griddle. Cook until bubbles form on the surface and edges begin to look set, about 2 minutes. Flip and cook another 1 to 2 minutes until golden and cooked through. Move finished pancakes to the warming tray while you finish the batch.

  • Serve: Stack pancakes on plates. Drizzle with warm maple syrup, sprinkle with pepitas, and garnish with star anise if using. Serve immediately.
