Ingredients
For the french toast:
4 slices brioche or thick-cut bread
2 large eggs
1/2 cup whole milk
1/4 cup pumpkin purée
1 tablespoon brown sugar
1 teaspoon pumpkin pie spice
1/2 teaspoon vanilla extract
Pinch of salt
Butter, for greasing the griddle
For the caramelized apples:
1 apple, thinly sliced
1 tablespoon butter
1 tablespoon brown sugar
1/4 teaspoon cinnamon
For topping:
Whipped cream
Maple syrup
Extra cinnamon for dusting (optional)
Directions
Prepare the batter: In a shallow bowl, whisk together eggs, milk, pumpkin purée, brown sugar, pumpkin pie spice, vanilla, and salt until smooth.
Dip the bread: Heat your bella 12" x 22" XL Griddle with Warming Tray to medium heat. Lightly grease with butter. Dip each slice of bread into the pumpkin batter, coating both sides well.
Cook the French toast: Place coated bread slices on the griddle and cook 2 to 3 minutes per side, or until golden brown and crisp. Transfer to the warming tray to keep hot.
Caramelize the apples: In a small skillet or on the griddle, melt 1 tablespoon of butter. Add apple slices, brown sugar, and cinnamon. Cook for 3 to 5 minutes until apples are tender and glazed.
Assemble and serve: Stack the French toast on plates. Top with caramelized apples, a generous dollop of whipped cream, and a drizzle of maple syrup. Sprinkle with cinnamon if desired.
