Pumpkin Pie Crepes with Bananas, Whipped Cream and Pecans

Ingredients

For crepes:

  • 3/4 cup all-purpose flour

  • 2 large eggs

  • 1/2 cup milk

  • 1/4 cup water

  • 2 tablespoons pumpkin purée

  • 1 tablespoon melted butter (plus more for greasing the griddle)

  • 1 tablespoon brown sugar

  • 1 teaspoon pumpkin pie spice

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

For filling and topping:

  • 1 banana, thinly sliced

  • Whipped cream

  • Maple syrup

  • Chopped toasted pecans

Directions

  • Make the crepe batter: In a mixing bowl, whisk together flour, eggs, milk, water, pumpkin purée, melted butter, brown sugar, pumpkin pie spice, vanilla, and salt until smooth. Let rest for 5 minutes.

  • Preheat the griddle: Heat your bella 12” x 22” XL Griddle with Warming Tray to medium heat. Lightly grease with butter.

  • Cook the crepes: Pour about 1/4 cup of batter onto the griddle. Using the back of a spoon or a crepe spreader, spread the batter into a thin circle. Cook for 1 to 2 minutes until the underside is lightly golden, then flip and cook the other side for another minute. Repeat with remaining batter. Keep cooked crepes warm using the built-in warming tray.

  • Assemble and serve: Lay banana slices across one half of each crepe and fold over. Top with whipped cream, a sprinkle of chopped pecans, and a drizzle of maple syrup. Serve warm.
