Rocket Blender Boost
Ingredients
2 cups fresh basil leaves, packed
½ cup grated Parmesan cheese
⅓ cup pine nuts (or walnuts as an alternative)
2 garlic cloves
½ cup olive oil
½ teaspoon salt
¼ teaspoon black pepper
Optional: squeeze of fresh lemon juice (for brightness)
Directions
Add ingredients to blender In the bella Rocket Blender Boost, add the basil, Parmesan, pine nuts, garlic, salt, and pepper.
Blend with olive oil Pour in the olive oil. Secure the lid and blend until smooth and creamy. Scrape down the sides as needed for an even consistency.
Taste and adjust Add more salt, pepper, or lemon juice to taste. If you prefer a thinner pesto, blend in a touch more olive oil.
Serve or store Use immediately, or transfer to an airtight container and refrigerate for up to 5 days. Great for pastas, sandwiches, or as a dip.
