Rocket Blender Boost
Ingredients
2 cups fresh basil leaves, packed
½ cup grated Parmesan cheese
⅓ cup pine nuts (or walnuts as an alternative)
2 garlic cloves
½ cup olive oil
½ teaspoon salt
¼ teaspoon black pepper
Optional: squeeze of fresh lemon juice (for brightness)
Directions
Add ingredients to blender: In the bella Rocket Blender Boost, add the basil, Parmesan, pine nuts, garlic, salt, and pepper.
Blend with olive oil: Pour in the olive oil. Secure the lid and blend until smooth and creamy. Scrape down the sides as needed for an even consistency.
Taste and adjust: Add more salt, pepper, or lemon juice to taste. If you prefer a thinner pesto, blend in a touch more olive oil.
Serve or store: Use immediately, or transfer to an airtight container and refrigerate for up to 5 days. Great for pastas, sandwiches, or as a dip.
