Ingredients
1 lb beef flank steak or skirt steak, thinly sliced
1 large onion, thinly sliced
2 bell peppers (red and green), thinly sliced
3 cloves garlic, minced
1 tbsp olive oil
Juice of 1 lime
1 tsp chili powder
1 tsp ground cumin
1 tsp smoked paprika
½ tsp salt
½ tsp black pepper
¼ cup beef broth
Tortillas for serving
Optional toppings: Sour cream, guacamole, shredded cheese, salsa, or cilantro
Directions
Step 1: Prepare the Ingredients
Slice the beef, onion, and peppers into thin strips. Mince the garlic.
Step 2: Use the Searing Function
Set the Bella Pro 6qt Multi-Cooker to
Sear/Sauté
mode. Add the olive oil and let it heat for about 2 minutes.
Add the sliced beef to the pot and sear for 3–4 minutes, stirring occasionally, until browned. Remove the beef and set it aside.
Step 3: Sauté the Vegetables
In the same pot, add the onions, peppers, and garlic. Sauté for 2–3 minutes until slightly softened.
Step 4: Combine Ingredients
Return the seared beef to the pot and add the chili powder, cumin, smoked paprika, salt, and black pepper. Mix well to coat the beef and vegetables evenly.
Pour in the lime juice and beef broth to deglaze the pot and prevent sticking.
Step 5: Cook
Slow Cook Option: Switch the cooker to
Slow Cook (High)
and cook for 2 hours.
Pressure Cook Option: Use the
Pressure Cook
setting, seal the lid, and cook on High for 15 minutes. Allow natural pressure release for 10 minutes before opening the lid.
Step 6: Serve
Warm tortillas in a separate pan or microwave.
Spoon the beef and vegetables onto the tortillas and add your favorite toppings. Serve immediately.
