Ingredients
1 lb large shrimp, peeled and deveined (tails on)
½ cup all-purpose flour
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
2 eggs
1 tablespoon water
1 cup shredded coconut (sweetened or unsweetened)
½ cup panko breadcrumbs
Cooking spray or olive oil spray
Sweet chili sauce or lime wedges (for serving)
Directions
Prepare the Shrimp
Pat the shrimp dry with paper towels.
Set Up Breading Stations
In a shallow bowl, mix flour, salt, pepper, and garlic powder.
In a second bowl, whisk together eggs and water.
In a third bowl, combine shredded coconut and panko breadcrumbs.
Coat the Shrimp
Dredge each shrimp in the flour mixture, coating evenly.
Dip into the egg mixture, letting any excess drip off.
Finally, coat in the coconut-panko mixture, pressing gently to adhere.
Air Fry the Coconut Shrimp
Preheat your air fryer to 375°F for 3 minutes.
Lightly spray the air fryer basket with cooking spray.
Arrange the shrimp in a single layer (cook in batches if needed).
Lightly spray the tops with oil for extra crispiness.
Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.
Serve & Enjoy
Remove the shrimp from the air fryer and serve hot with sweet chili sauce and lime wedges.
