Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on)

  • ½ cup all-purpose flour

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • ½ teaspoon garlic powder

  • 2 eggs

  • 1 tablespoon water

  • 1 cup shredded coconut (sweetened or unsweetened)

  • ½ cup panko breadcrumbs

  • Cooking spray or olive oil spray

  • Sweet chili sauce or lime wedges (for serving)

Directions

  • Prepare the Shrimp

    • Pat the shrimp dry with paper towels.

  • Set Up Breading Stations

    • In a shallow bowl, mix flour, salt, pepper, and garlic powder.

    • In a second bowl, whisk together eggs and water.

    • In a third bowl, combine shredded coconut and panko breadcrumbs.

  • Coat the Shrimp

    • Dredge each shrimp in the flour mixture, coating evenly.

    • Dip into the egg mixture, letting any excess drip off.

    • Finally, coat in the coconut-panko mixture, pressing gently to adhere.

  • Air Fry the Coconut Shrimp

    • Preheat your air fryer to 375°F for 3 minutes.

    • Lightly spray the air fryer basket with cooking spray.

    • Arrange the shrimp in a single layer (cook in batches if needed).

    • Lightly spray the tops with oil for extra crispiness.

    • Air fry for 8-10 minutes, flipping halfway, until golden brown and crispy.

  • Serve & Enjoy

    • Remove the shrimp from the air fryer and serve hot with sweet chili sauce and lime wedges.
